Whether you intend dining out for a special occasion or are just looking for a snack to keep you going, the best option is to eat the local food. This is the freshest, tastiest and best value.

We try to take account of varying likes for spiciness and other dietary requirements but stop short of advising a trip to one of the international fast-food chains. The guide is organised on the principle that various streets in any Chinese city become known as a 'food street'  - one almost entirely filled with restaurants, snack shops or food stalls - and that if we point you to where these are, with our favourites, then you shouldn't have too much problem finding something that suits you. Each page therefore covers one such 'food street'.

Our food guide is based on exeperience over several years. However, everyone has their own expectations and preferences so we cannot guarantee that what we rave about will suit you. We have tried to be consistent with comments though. If we say a bit spicy for one dish you can expect another dish to be of the same heat.

Please let us know if you discover somewhere new to be recommeneded, or somewhere old that is perhaps past its prime. We are always happy to go and investigate.
